Vegetable Dish

We had a question about vegetable dishes.

This is a vegetable dish, even if it doesn’t look like one.  This one makes use of the green leaves from a leek.  The leaves were boiled for a few minutes to soften them.

The basis for these “pies” is always pie crust, eggs, cheese, and maybe a little milk.  We just spread the vegetable of the day in a layer over the crust and pour the egg mixture on top.  In this case, the cheese was small curd cottage cheese.  It takes around an hour to bake at 350-400 degrees F.
